A couple of months ago, I confessed that I’ve been in search of the perfect chocolate chip cookie recipe. Call me crazy (my husband does), but I’m not satisfied with a cookie that tastes great but looks ugly. I want my baked cookie to look like the picture. If it doesn’t, I’m disappointed because presentation means a lot to me. Needless to say, I’ve had a lot of Pinterest fails. My cookies were flat, crispy, crunchy and dry. So I asked my Instagram friends to give me their favorite recipes to try. I intended to try all of them but life got in the way. Unfortunately, I haven’t done much baking since Christmas, but now that it’s Spring Break I’m getting back on task! My friend Lauren gave me her favorite recipe for Triple Chocolate Chip Cookies so I’ve chosen her recipe to share this week. By the way, she gave me samples too, which were stolen by my kids (you can read about that here). That should give you a hint about how good these cookies are! 😉
Triple Chocolate Chip Cookies
Yield: 14–16 large cookies
Ingredients
2 cups flour
1/2 tsp baking soda
1/2 tsp salt
3/4 cup butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 TBL vanilla
1 egg
1 egg yolk
1/3 cups each white, milk, and dark chocolate chips
Preparation
1. Preheat oven to 325℉
2. Lightly grease cookie sheets
3. Sift together flour, baking soda, and salt in a medium bowl
4. In a larger bowl, cream together melted butter, brown sugar, white sugar.
5. Beat in vanilla, egg, and egg yolk until light and creamy
6. Mix in dry ingredients until just mixed
7. Stir in chocolate chips
8. Drop dough 1/4 cup at a time onto greased cookie sheets. Space well!
9. Bake 12–13 minutes *
10. Cool for a few minutes then transfer to cooling racks.
*Note: original recipe calls for 15–17 minutes. Set timer for 10 minutes then watch them carefully. To get them nice, soft, and chewy, cookies should look slightly under-done when removed from the oven.
